Ginsan - This Wa-Gyuto features a San-Mai double beveled blade constructed of Ginsan steel with an octagonal handle and a Water Buffalo horn bolster. Ginsan means “Silver 3” and refers to the amount of chromium in the metal which is the minimum amount necessary to make it stain resistant, this results in the blade acting very similar to carbon steel. Saya cover with pin is included.

Ginox - This Wa-Gyuto features a single steel constructed Inox blade and a traditional D-shaped handle with a Water Buffalo horn bolster. This knife is stain resistant. Saya cover is included.
