The FKS series features a Granton edged stainless Molybdenum Vanadium blade which has been heat treated to a 58-59 Rockwell hardness, the blade is sharpened asymmetrically at an 80/20 ratio and features a compressed wood handle. The Dimples in the blade create air pockets which help reduce friction and prevent food from sticking to the blade.
